Elmhirst is an unpasteurised triple cream, mould ripened cheese, similar to 'Vignotte'. It has a surprisingly light and silky texture with a white and bloomy rind.
When eaten young (2-3 weeks) it has a delicate flavour with a light, moussy texture, developing a luxuriously rich, creamy and full bodied flavour when mature (4-6 weeks).
Great with fresh or dried fruits such as figs.
