Cornish Jack - River Amble Creamery, Cornwall.

Based on a traditional Swiss farmhouse recipe for Emmental, Cornish Jack is a sweet, slightly fruity cheese with nutty overtones to finish. Maturation for between 4 to 6 months allows its unique flavour to develop. Its melting qualities and flavours make it perfect for cooking, showcased by Nathan Outlaw's 2-Star Michelin restaurant in Port Isaac. Cornish Jack is made with traditional rennet so is unsuitable for vegetarians.
