Cornish Jack - River Amble Creamery, Cornwall.
Based on a traditional Swiss farmhouse recipe for Emmental, Cornish Jack is a sweet, slightly fruity cheese with nutty overtones to finish. Maturation for between 4 to 6 months allows its unique flavour to develop. Its melting qualities and flavours make it perfect for cooking, showcased by Nathan Outlaws two starred Michelin restaurant in Port Isaac. Cornish Jack is made with traditional rennet so is unsuitable for vegetarians.
